This is a three layer cake that can have any icing that you choose. You decide what flavor you fancy to complete your creation.

INGREDIENTS

 Imperial  METRIC

 
SERVINGS: 10-12 peop;e
 
3 Cups Flour
2 Cups Sugar
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Ground Cinnamon
3 Eggs, beaten
1 Cup oil
1 1/2 teaspoon Vanilla
1 (8oz.) Can Crushed Pineapple (drained)
1 Cup Pecans (chopped)
2 Cups Bananas (chopped)
 
 
 
 
DIRECTIONS
 
Combine flour, sugar, baking soda, salt and ground cinnamon in a large bowl.
Add in the eggs and oil and stir until all dry ingredients are moistened (do not beat).
Stir in vanilla, pineapples 1/2 cup pecan and bananas.
Spoon mixture into three grease and floured 9" round cake tins.
Bake at 350 degrees F for 30 minutes until inserted toothpick comes out clean.
Cool in cake tins for 15 minutes.
Remove from cake tins to allow to cool completely.
Spread with your choice of icing inbetween each layer, sides and top.
Sprinkle remaining chopped pecan on top of cake.
