INGREDIENTS

 Imperial  METRIC

 
SERVINGS: 8-10 people
 
Cake:
175 grams (6 oz) soft margarine
175 grams (6 oz) caster sugar
175 grams (6 oz) self raising flour
50 grams (2 oz) cocoa
1 teaspoon baking powder
3 eggs, medium
1 tablespoon milk

Filling:
110 grams (4 oz) fresh strawberries, sliced
142 ml carton double cream, whipped
Icing sugar to dredge
 
 
 
 
DIRECTIONS
 
Preheat oven to 180 degrees C/350 degrees F gas mark 4

Put the margarine and sugar into a large bowl.
Sift together the flour, cocoa and baking powder and add to the bowl. Add the eggs and beat together until light and creamy.
Add the milk to give a soft dropping consistency.
Divide the mixture between two pans and spread evenly.

Bake for 20 minutes until well risen and springy.

Turn out and cool completely.

Sandwich together with the strawberries and cream and dredge with icing sugar.
