INGREDIENTS

 Imperial  METRIC

 
SERVINGS: 8-10 people
 
Cake:
150 grams/5oz. self-raising flour
a pinch of salt
5 tablespoons cocoa powder
1 teaspoon baking powder
juice and grated rind of 1 large orange
3 eggs
175 grams/6 o. soft margarine
175 grams/6 oz. caster sugar

Icing:
2 x 175 grams/6 oz. plain chocolate oranges or 35 grams/12 oz. orange flavored chocolate
300ml/1/2 pint double cream
 
 
 
 
DIRECTIONS
 
Preheat the oven to 350 degrees F. Grease and flour two 8 inch sandwich tins.

Sift flour, baking powder, cocoa, and salt into a large bowl.
Add 1 T. orange juice, rind, margarine, sugar and eggs.
Beat this with an electric whisk for 2 minutes until pale and fluffy.
Pour the mixture between the two tins and make a well in the center of each cake.

Bake for 20-25 minutes until springy to the touch and remove from the oven.
Allow cakes to cool in tins for 5 minutes. Turn onto a wire rack until completely cool.

Pierce the cakes with a skewer and spoon the remaining orange juice over the cakes and allow to soak in.

Icing:

Chop the chocolate and place in a pan with the cream. Bring to a boil without stirring.
Remove pan from heat and allow to stand for 10 minutes until melted. Stir chocolate until smooth. Let icing cool until stiff enough to spread.
Use a third of the icing to sandwich the cakes together and then swirl the remainder over the top and side of cake.
