INGREDIENTS

SERVINGS: 4 people
 
500g/1 lb 2 oz skinless, boneless chicken breasts
1 egg
100 grams/4 oz fresh breadcrumbs
5 tablespoons sunflower oil
1 teaspoon dried mixed herbs
A pinch of salt
 
 
 
 
DIRECTIONS
 
Combine the bread crumbs, salt and mixed herbs in a large bowl.

Cut the chicken breasts into 5cm/2” pieces.

Beat the egg in a small bowl and dip the chicken pieces into the egg.

Put the chicken in the breadcrumb mixture making sure that the chicken has an even cover of the mixture.

Pour the sunflower oil in a large frying pan and fry the chicken for 10-15 minutes turning occasionally until a nice golden brown, making sure the chicken has been cooked through.

Place the cooked chicken on a plate with a paper towel to absorb any excess oil.
