This banana bread can be served warm from the oven or at room temperature. Once cooled you could put an icing on it but it is sweet enough without. Also, if you like nuts you could add walnuts or pecan in the mix.

INGREDIENTS

 Imperial  METRIC

 
SERVINGS: 10-12 people
 
3½ cups plain flour
2½ teaspoons baking flour
1 teaspoon salt
1 teaspoon baking soda
1 1/3 cups sugar
2/3 cup shortening
4 eggs
2 cups mashed bananas (or 2 cups grated zucchini - taste same as banana)
1 cup pecans or walnuts, chopped
 
 
 
 
DIRECTIONS
 
Combine plain flour, baking powder, baking soda and salt. Mix well and set aside.

Combine the sugar and shortening, cream until light and fluffy. Add eggs – heat well. Stir in dry ingredients and then add in the bananas and nuts.

Pour batter into 2 greased and floured 9 x 5 x 3 loaf pans and bake at 350 degrees for 45 minutes or until toothpick comes out clean.



Additional Notes

Leave banana bread to cool. Run a knife along the four sides to help loosen the loafs from the sides of the pans. Place a plate on top of bread and turn over to let the loaf rest on the plate
